It is a tasty and healthy breakfast meal made with bread pieces, mixed with other veggies in herbs and spices.
Ingredients:
- 1 slice of brown bread
- 1 Onion – chopped
- 1 Tomato – chopped
- ½ Carrot – chopped
- 2 tablespoon peas
- Handful of french beans – chopped
- Cauliflower–2 to 3 florets –chopped
- ½ capsicum – chopped
- 1 tsp oil
- Mustard/rai seeds
- Green chili
- 1 tsp sesame seeds – unpolished
- Coriander to garnish
- Salt to taste (try rock salt)
- ½ a lemon juice
Method:
- Cut the bread into small crumbs.
- Take a pan. Put one teaspoon oil. When it turns hot, add the rai seeds and green chili.
- Once the seeds start to crackle, add the chopped onions. When onions turn brown, add the carrot, peas, beans and 2-3 florets of cauliflower. Sauté them.
- When done, add the bread crumbss
- Add tomato, sesame seeds and the seasonings of your choice.
- Cover the pan for 2-3 minutes. Squeeze the juice of lemon on top.
- Garnish with coriander leaves and serve.
