Warm up this winter with a bowl of nourishing soup. This soup is loaded with all the essential vitamins, minerals and nutrients and can work as the main dish in meal too.
This recipe serves 2-3.
Ingredients:
- 1 Medium carrot
- 4-5 leaves of spinach (chopped)
- ½ cup Cauliflower
- 2 tbs. Chopped onion
- 1 medium chopped capsicum
- 2 medium pureed tomatoes
- ½ cup steamed raungi/ lobia (black eyed peas)
- 2 cup veg stock
- 1 tsp. Olive oil
- 4 chopped cloves of garlic
- Salt as per taste
- Black pepper
- Oregano
Method:
- In a large saucepan, sauté the garlic cloves, onion, carrots and cauliflower in oil until crisp-tender. Add capsicum, tomatoes puree, spinach, steamed raungi, veg stock, bring it to a boil.
- Reduce heat; simmer, uncovered, for 10 minutes or until vegetables are tender, stirring occasionally.
- Add oregano and black pepper.
- Serve hot.
