Winter Hot Soup

Warm up this winter with a bowl of nourishing soup. This soup is loaded with all the essential vitamins, minerals and nutrients and can work as the main dish in meal too.

This recipe serves 2-3.

Ingredients:

  • 1 Medium carrot
  • 4-5 leaves of spinach (chopped)
  • ½ cup Cauliflower
  • 2 tbs. Chopped onion
  • 1 medium chopped capsicum
  • 2 medium pureed tomatoes
  • ½ cup steamed raungi/ lobia (black eyed peas)
  • 2 cup veg stock
  • 1 tsp. Olive oil
  • 4 chopped cloves of garlic
  • Salt as per taste
  • Black pepper
  • Oregano

Method:

  • In a large saucepan, sauté the garlic cloves, onion, carrots and cauliflower in oil until crisp-tender. Add capsicum, tomatoes puree, spinach, steamed raungi, veg stock, bring it to a boil.
  • Reduce heat; simmer, uncovered, for 10 minutes or until vegetables are tender, stirring occasionally.
  • Add oregano and black pepper.
  • Serve hot.
