Homemade Pesto is an easy and delicious way to using up a glut of basil or other herbs.
Ingredients:
- 1 cup fresh basil leaves
- 1/3 cup cashews (soaked in water for 6hour
- 3-4 garlic cloves, crushed
- 1 tablespoon fresh lemon juice
- 1 small onion
- Salt and pepper, to taste
INSTRUCTIONS
- Place all ingredients into a food processor and blend until it becomes a smooth paste.
- Season with more salt and pepper if needed.

The pesto will last for around 1 week in an airtight jar in the fridge.try to use as fresh as possible.
