Foxtail millet is one of the healthy and tasty millets, millets have many health benefits, they are rich in dietary fiber, iron, and copper. It helps to reduce the level of bad cholesterol on blood and supports the strong immune system, and it contributes a lot for weight loss.
Ingredients:
Base
- 1/2 teaspoon cumin seeds
- 1 cup cauliflower florets
- 1/2 cup green peas (fresh)
- 1/2 cup chopped carrot
- 1/2 cup chopped potato
- 2/3 cup foxtail millet, soaked
- 1/2 tsp turmeric powder
- 1 cup water
Flavouring
- 1/3 cup cashews, soaked
- 1 cup chopped coriander
- 1/4 cup fresh mint leaves
- 1 tsp grated ginger
- 1/2 teaspoon finely chopped green chilli
- 1/2 teaspoon javitri elaichi powder
- 11/2 teaspoon lime juice
- 1 tablespoon rose water
- 2 teaspoon rock salt
- 1/2 cup water
Topping
- 1 teaspoon mint leaves
- 20 saffron strands ,soaked
Preparation
- Soak 2/3cup foxtail millet and 1/3 cup cashews separately in water for 6 hours.
- Soaked 20 saffron strands in 2 teaspoon of hot water for minutes.
- Prepare Javitri elaichi powder by roasting and blending 1tbsp javitri and 2 tbsp elaichi (green).
Method
- Heat a pot and roasted the cumin seeds for a minute on low flame.
- Add all the remaining base ingredients, except the water, to the same pot, and stir. Then add the water. Cover and cook for 15 minutes on low flame.
- Place all the flovouring ingredients in a blender and blend until smooth.
- Once the veggies and millet are cooked, transfer the blended paste to the same pot. Do not stir. Switch off the stove, and cover for 10 minutes.
- Add the topping, and serve warm with raita.
