Ingredients
Base
- 21/2 cups chopped Cucumber
- 1 Cup chopped mango
- 10 soaked almonds
- 2 tablespoons chopped mint
- ¼ teaspoon black pepper Powder
- ½ teaspoon rock salt
- 1/8 teaspoon turmeric powder
Topping
- ¼ Cup finely chopped red bell
- 1 tablespoon pumpkin seeds, roasted
- 1 tablespoon pomegranate (optional)
PREPARATION
- Soak 10 almonds in water for 6 hours
METHOD
- Set aside ½ cup of chopped cucumber and place the rest of the base ingredients in a blender and blend until smooth.
- Add ½ cup of chopped Cucumber to the Soup base using a spatula.
- Keep the soup in the fridge for 20 minutes, then top it with red bell peppers, pumpkin Seeds and pomegranate and serve.
