Salted Steel Cut Oats Porridge

This hot bowl is very hearty, satisfying and surely healthy. This is made from whole grain oats that has been cut into pieces and not rolled/flattened. It has a very chewy, nutty texture which is very different from the regular flat oats.

It is specially recommended for diabetics because the complexity of the carbohydrate in steel cut oats is maximum due to which there is minimum rise in blood sugar levels.

Ingredients:

  • 1serving spoon of steel cut oats
  • 1tsp ghee
  • 4-5 florets of cauliflower
  • ½ Carrot (chopped)
  • 7-8 French beans (chopped)
  • 1onion cut in cubes
  • Puree of 2 tomatoes
  • 4-5 pods of garlic
  • Salt to taste
  • 2cup Water

Method:

  1. Heat a pressure cooker, add 1tsp ghee and oats. Roast it for 2-3 minutes till it turns to light brown in colour.
  2. Add onion, garlic, cauliflower, french beans, Carrots mix well and cook for 3
    minutes.
  3. Add tomatoes puree, water and salt mix it well .Cook for one whistle.
  4. Later cook on a medium flame for 5-10 minutes.
  5. Serve hot, garnished with coriander leaves.

DCN TIP

  • This is a gluten free recipe and suited to all who are intolerant to gluten.
  • Steel cut oats are also a better source of protein and due to complex carbohydrates is beneficial for diabetics.
