EXCELLENT REPLACEMENT OF BHELPURI WHICH IS FULL OF FRIED NAMKEEN

Ingredients

  • ½ Onion, finely chopped
  • ½ Cup fresh pomegranate seeds
  • 1 Cup of puffed amaranth seeds
  • 1Tomato, finely chopped
  • 1 Cucumber, finely chopped
  • 1 Green chilli, finely chopped
  • 5-6 Roasted peanuts
  • 1Teaspoon of Chia seeds (coarsely ground)
  • 1 Tablespoon mint- coriander chutney
  • Rock salt to taste
  • 1 Tablespoon fresh lemon juice
  • Coriander leaves (finally chopped for garnishing)

Method:

  1. In a bowl, mix all the above ingredients.
  2. Toss well and garnish with coriander leaves.

You can puff amaranth seeds at home in a hot dry pan.

Carry the dry puffed amaranth and the salad separately to work. Mix them whenever you feel the hunger pangs in between the meals. You have an instant, healthy snack at hand. This also ensures that the grains do not become soggy which happens when they are pre-mixed with cut vegetables and fruits for long hours.
