Chickpea Sandwich

Ingredients:

For the Filling:

  • 1 cup boiled chickpeas (chole), lightly mashed
  • 1 small onion, chopped
  • 1 small tomato, chopped
  • 1 small cucumber, chopped
  • 1 green chili, chopped (optional)
  • 2 tbsp coriander leaves, chopped
  • 1 tsp chaat masala
  • 1/2 tsp cumin powder
  • 1/2 tsp red chili powder
  • Salt to taste
  • Juice of half a lemon

For the Sandwich:

  • Bread slices (whole wheat, multigrain and sourdough)
  • Butter or ghee for toasting
  • Green chutney (mint, coriander, green chilies, lemon juice)
  • Sliced cucumber, tomato, and onion (optional)
  • Instructions:

    Make the Filling:

    • Mix the mashed chickpeas with the chopped onion, tomato, cucumber, green chili, and coriander leaves.
    • Add chaat masala, cumin powder, red chili powder, salt, and lemon juice. Stir well.

    Assemble the Sandwich:

    • Spread butter or ghee on one side of bread slice.
    • Spread green chutney on the unbuttered side of one slice.
    • Place the chickpea mixture on the chutney-spread side.
    • Add sliced cucumber, tomato, and onion, if using.
    • Top with the other slice of bread, buttered side out.

    Toast the Sandwich:

    • Toast the sandwich on a hot tawa or in a sandwich press until both sides are golden and crispy.

    Serve:

    • Cut the sandwich in half and serve hot with extra chutney
    • Enjoy your quick and tasty Indian-style chickpea sandwich!
