Ingredients:
For the Filling:
- 1 cup boiled chickpeas (chole), lightly mashed
- 1 small onion, chopped
- 1 small tomato, chopped
- 1 small cucumber, chopped
- 1 green chili, chopped (optional)
- 2 tbsp coriander leaves, chopped
- 1 tsp chaat masala
- 1/2 tsp cumin powder
- 1/2 tsp red chili powder
- Salt to taste
- Juice of half a lemon
For the Sandwich:
- Bread slices (whole wheat, multigrain and sourdough)
- Butter or ghee for toasting
- Green chutney (mint, coriander, green chilies, lemon juice)
- Sliced cucumber, tomato, and onion (optional)
- Mix the mashed chickpeas with the chopped onion, tomato, cucumber, green chili, and coriander leaves.
- Add chaat masala, cumin powder, red chili powder, salt, and lemon juice. Stir well.
- Spread butter or ghee on one side of bread slice.
- Spread green chutney on the unbuttered side of one slice.
- Place the chickpea mixture on the chutney-spread side.
- Add sliced cucumber, tomato, and onion, if using.
- Top with the other slice of bread, buttered side out.
- Toast the sandwich on a hot tawa or in a sandwich press until both sides are golden and crispy.
- Cut the sandwich in half and serve hot with extra chutney
