Black Eye Bean Salad

Black-eyed beans are highly nutritious and are a good staple food. Black-eyed beans are rich in fiber and protein, which make them an excellent energy source.

Ingredients:

  • 2 cups Iceberg lettuce
  • 1 cup boiled Black eye bean (raungi)
  • 1 cup Steamed france bean
  • 1 cupcut grapes
  • 2-3 tbsp. hung curd
  • 1 tbsp. Flaxseed
  • 1 tbsp. pumpkin seeds
  • Green Chutney
  • Juice of ½ lemon
  • 1 tbsp. olive oil
  • Black pepper as per taste
  • Salt as per taste

Method:

  • Take a pan add steamed France bean and black eye bean in 1 tsp. of olive oil and sauté them.
  • In a large bowl mix lettuce leaves, sauté France beans and black eye bean.
  • Add rest of all the ingredients to the above bowl and mix well.
  • Serve cold or at room temperature
