In this recipe, we have combined barley with nuts and seeds to give you a wholesome, nutritious breakfast. Quick and easy to make, it is great for weight watchers too. It also helps lower cholesterol and control blood sugar levels. Barley is full of fiber and is therefore very fulfilling.
Ingredients:
- 1 serving spoon of barley porridge
- Milk / Almond milk
- Water – approx. three times the amount of barley
- 5 Soaked almonds – cut into pieces
- 1 walnut – broken into pieces
- 1 Fig – cut into pieces with a knife/scissor
- 5-7 pumpkin seeds
- 1 tsp honey – optional
Method:
- Boil the broken barley in water. It can be cooked in a pressure cooker too, to reduce the time of cooking.
- Once done, add the milk and bring it to a boil.
- Then let it simmer on low flame for 5 minutes.
- Take it off the heat once it becomes a uniform consistency.
- When still hot, add the walnuts, almonds, fig and pumpkin seeds.
- The fig provides the sweetness but in case one wants it sweeter, they can add honey to the porridge.
- Serve hot.
DCN TIP
If one is not able to find barley dalia, they can roast whole barley in a pan. Let it cool down a bit. Then crush it in a grinder. It easily breaks into pieces.
One can add fruits to this porridge as per their liking.
