A wholesome and easily digestible one-pot meal, packed with nourishing vegetables and gentle on the stomach.
Ingredients (Serves 1-2)
- ½ cup-soaked brown rice
- 3 cups water
- ½ cup grated bottle gourd
- ½ cup finely chopped zucchini
- ½ cup finely chopped green beans
- ½ cup grated carrot
- ½ cup chopped tomato
- 1 small green chili, finely crushed
- ½ teaspoon turmeric powder
- ¼ cup coconut kernel, sliced and blended
- 1 teaspoon rock salt (adjust to taste)
- ¼ cup chopped coriander
Preparation
- Soak the brown rice in water for at least 3 hours before cooking.
Cooking Method
- Take a deep pan or kadhai and add the soaked brown rice along with 3 cups of water. Let it simmer on a low flame for about 30-40 minutes, stirring occasionally.
- Mix in the green beans, carrots, bottle gourd, and turmeric powder. Allow it to cook for another 10-15 minutes, adding water if necessary.
- Stir in the zucchini and crushed green chili. Let it cook for about 5 more minutes until the vegetables soften.
- Turn off the heat and add the chopped tomatoes, blended coconut, and salt. Cover the pan and let it rest for 5 minutes, allowing the flavors to blend.
- Garnish with fresh coriander and serve warm.

You can adjust the vegetables based on what’s available in the season. For kids, add 1-2 teaspoons of Desi Ghee on top for enhanced nutrition and taste.
