Steel Cut Oats with Almond Milk

This recipe involves the use of the whole grain oats that have been cut and hence the name. This bowl of breakfast does not contain any sugars and is still very hearty, satisfying and healthy. It has a very chewy, nutty texture which is accentuated by the addition of nuts and seeds.

Ingredients:

  • 1 serving spoon of steel cut oats
  • 1 cup Almond Milk
  • Water – approx. double the amount of oats
  • 5 Soaked almonds – cut into pieces
  • 1 walnut – broken into pieces
  • 1 Fig – cut into pieces with a knife/scissor
  • 5-7 pumpkin seeds
  • 1 tsp honey – optional

Method:

  • In a pressure cooker boil the steel cut oats in water. Give it a whistle.
  • Once done, bring it to a boil.
  • Take it off the heat once it becomes a uniform consistency.
  • Add the Almond milk mix it well.
  • When still hot, add the walnuts, almonds, and fig and pumpkin seeds.
  • The fig provides the sweetness but in case one wants it sweeter, they can add honey to the porridge.
  • Serve hot.

  • Steel cut oats are a good source of protein.
  • Diabetic should avoid adding honey also.
