Vegetable Khichdi

A wholesome and easily digestible one-pot meal, packed with nourishing vegetables and gentle on the stomach.

Ingredients (Serves 1-2)

  • ½ cup-soaked brown rice
  • 3 cups water
  • ½ cup grated bottle gourd
  • ½ cup finely chopped zucchini
  • ½ cup finely chopped green beans
  • ½ cup grated carrot
  • ½ cup chopped tomato
  • 1 small green chili, finely crushed
  • ½ teaspoon turmeric powder
  • ¼ cup coconut kernel, sliced and blended
  • 1 teaspoon rock salt (adjust to taste)
  • ¼ cup chopped coriander

Preparation

  • Soak the brown rice in water for at least 3 hours before cooking.

Cooking Method

  • Take a deep pan or kadhai and add the soaked brown rice along with 3 cups of water. Let it simmer on a low flame for about 30-40 minutes, stirring occasionally.
  • Mix in the green beans, carrots, bottle gourd, and turmeric powder. Allow it to cook for another 10-15 minutes, adding water if necessary.
  • Stir in the zucchini and crushed green chili. Let it cook for about 5 more minutes until the vegetables soften.
  • Turn off the heat and add the chopped tomatoes, blended coconut, and salt. Cover the pan and let it rest for 5 minutes, allowing the flavors to blend.
  • Garnish with fresh coriander and serve warm.

DCN TIP

You can adjust the vegetables based on what’s available in the season. For kids, add 1-2 teaspoons of Desi Ghee on top for enhanced nutrition and taste.
