Samak Rice Kheer

Samak rice is high in fibre, keeps digestion smooth and helps lower cholesterol. It is a good source of essential minerals such as phosphorus, zinc and folate, vitamins A, C and E which are essential for overall health and immunity.

Serves – 1

Ingredients

  • ¼ Cup samak rice
  • Milk 300 ml
  • 1 tablespoon of freshly grated coconut
  • Almonds (5-6), soaked and sliced
  • Saffron (kesar) 4-5 strands
  • Shakkar 1-2 teaspoon (Minimal amount as per your taste)
  • Green cardamom powder – ¼ teaspoon

Method

  1. Wash the samak rice. Then drain and keep it aside.
  2. Heat milk in a deep pan and bring it to a boil.
  3. Add the Samak rice to it and keep stirring to avoid sticking of samak at the bottom.
  4. Cook on a low heat till the milk thickens a little. Add grated coconut and saffron along with milk.
  5. Boil till samak becomes soft.
  6. When the kheer starts to thicken, add sliced almonds, shakkar and green cardamom powder.
  7. Serve it hot or chilled.
