Samak ki khichdi is an excellent fasting food. Light on the stomach and gluten free, it helps in the detoxification process of the body. To make it into a wholesome meal, have it with kuttu ki kadhi, peanut chutney, lauki (Bottle gourd) ki sabji or dahi aloo.
Ingredients:
- ¼ cup Samak rice (2 serving spoons)
- 1 Tsp Oil
- Jeera
- Hing
- 1-2 Green chillies chopped
- 2 Cups chopped bottle gourd (Lauki)
- 1 Chopped tomato
- 1 Tbsp-chopped coriander leaves
- Salt as per taste
Method:
- In a cooker heat the 1 tsp oil. Add hing, jeera and allow them to splutter.
- Add chopped green chillies, bottle gourd, tomato, samak rice and roast it until light brown.
- Add the water, salt and close the cooker. Give it two whistles on high flame. Then lower the flame and let it cook further for another 5 minutes.
- Once done, ensure that the lauki is properly cooked.
- Garnish with coriander leaves.
