A warm, crunchy, and flavor-packed salad perfect for gut health & immunity!
Ingredients:
- 2 boiled beetroots (diced)
- 1 cup fresh coconut (diced)
- 2 green chillies (chopped)
- 2 tbsp sunflower seeds
- 2 tbsp sesame seeds
- 1 tsp rai (mustard seeds)
- 1 tsp ghee
- Few curry leaves
- 2 tbsp lemon juice
- 1 tbsp honey
- 4 soaked & crushed walnuts
- 2 diced prunes
- 2 tbsp cranberries
- Salt & black pepper to taste
- Fresh coriander for garnish
How to Make It:
- Heat ghee in a pan, add rai, curry leaves, green chillies & a pinch of hing.
- Toss in boiled beetroot & coconut along with other ingredients (except coriander & some seeds for garnish).
- Switch off the heat & mix in lemon juice & honey for a tangy-sweet touch.
- Garnish with coriander & remaining seeds.
