Three Bean Salads

The Three Bean Salad features an excellent combination of different beans tossed in a tantalizing lemony basil dressing. The beans offer an ideal low-cal way to consume protein and fiber, which help to keep cholesterol under check.

Ingredients:

  • 2 tsp Chickpea (white chana)
  • 2 tsp Rajma
  • 2 tsp Black head bean
  • Garlic chopped
  • 1 Tomato chopped
  • ½ Capsicum chopped
  • ½ cup Sauté france bean chopped
  • 3 to4 Mushrooms chopped
  • 1 tsp oil
  • Salt
  • Black pepper
  • Lemon juice
  • Coriander leaves

Method:

  1. Soaked chickpea, Rajma and Black head bean (raungi) for 4 hours and steamed all together.
  2. In pan pour oil put chopped garlic, onion sauté till light pink, then put france bean and cook for 1-2 minutes
  3. Now add all the ingredients like tomatoes, capsicums, mushrooms, and the steamed beans, black pepper, salt.
  4. Cover it, and allow sitting for least for 3-4 minutes.
  5. Add lemon juice and chopped coriander leaves.
  6. Served cold, tastes best.
