Warm Beetroot & Coconut Salad

A warm, crunchy, and flavor-packed salad perfect for gut health & immunity!

Ingredients:

  • 2 boiled beetroots (diced)
  • 1 cup fresh coconut (diced)
  • 2 green chillies (chopped)
  • 2 tbsp sunflower seeds
  • 2 tbsp sesame seeds
  • 1 tsp rai (mustard seeds)
  • 1 tsp ghee
  • Few curry leaves
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • 4 soaked & crushed walnuts
  • 2 diced prunes
  • 2 tbsp cranberries
  • Salt & black pepper to taste
  • Fresh coriander for garnish

How to Make It:

  • Heat ghee in a pan, add rai, curry leaves, green chillies & a pinch of hing.
  • Toss in boiled beetroot & coconut along with other ingredients (except coriander & some seeds for garnish).
  • Switch off the heat & mix in lemon juice & honey for a tangy-sweet touch.
  • Garnish with coriander & remaining seeds.
