Vegan Pesto

Homemade Pesto is an easy and delicious way to using up a glut of basil or other herbs.

 

Ingredients:

  • 1 cup fresh basil leaves
  • 1/3 cup cashews (soaked in water for 6hour
  • 3-4 garlic cloves, crushed
  • 1 tablespoon fresh lemon juice
  • 1 small onion
  • Salt and pepper, to taste

INSTRUCTIONS

  • Place all ingredients into a food processor and blend until it becomes a smooth paste.
  • Season with more salt and pepper if needed.

DCN TIP

The pesto will last for around 1 week in an airtight jar in the fridge.try to use as fresh as possible.
